بعد كذا نضيف الحبحر الطازج والمويه المغليه تقريبا لتر وربع بهالشكل

ونخليها تطبخ عشر دقايق تقريبا بعدين نضيف المكرونه

تقريبا نص بكت انا استخدم بيتوني الذ واظبط نوع

واحب اشكل مااحط نوع واحد وخليها تغلي شوي

بعدين قصري لها وحركيها كل شوي وخليها ربع ساعه بس

وبتستوي ان شاء الله اهم شي لاتتشرب المويه كلها

وهذا شكلها بعد مااستوت شوفوا كثر المرق فيها

سفن دجاج أنا استخدمت 2

ملعقة زيت زيتون

بصلة صغيرة مقطعة

4 فصوص ثوم مفروم




فلفل أخضرحلو مقطع قطع صغيرة

فلفل أحمرحلو مقطع قطع صغيرة

معجون بندورة وعلبة صغير بندورة مجروشة (أنا ما كان عندي لا هاي ولا هاي فاستخدمت العادي بس اللون طلع باهت )

ملح وفلفل وربع كوب ماء اذا استخدمتي المعجون

شوية بقدونس مفروم

الطريقة:

1-ضعي ملعقة زيت زيتون في مقلاة وضعي قطع الدجاج حتى تصبح بنية اذا بدك تخليها تستوي بصير أنا ما استوت معي
قطعيها الحجم اللي بدك اياه وخليها على جنب

2-في طنجرة حطي شوية زيت زيتون وحطي البصل حتى يتغير لونه شوي ثم الثوم ونقلب قليلا ثم نضع الفلفل الأحمر و الأخضر والدجاج ونقلب على نار هادئة

3- نضع رب البندورة والماء و الملح و الفلفل ونغطي الطنجرة حتى يستوي الكل أنا أضفت بقدونس مفروم طلع اطيب

4- طبعا بتكوني سالقة المعكرونة هي المستخدمة كانت على شكل أنبوب
بس أنا استخدمت نوع ثاني وخلطي الكل وقدميها

المقادير والطريقه:-

أولا نضع فلفل أحمر مقطع + كرفس مقطع+ بصلة صغيرة مقطعة في طنجرة على النار مع شوية زيت زيتون ونقلبهن تقريبا خمس دقائق على نار هادئة

ثانيا:
نضع رب البندوة مش معجون بكون زي المي وبذور البندورة فيه يعني مجروش مع فلفل وملح ونتركهن على نار هادئة مدة 30 دققة حتى تشتد

سادسا:

نشيلها عن النار ونضع جبنة(ما انتبهت لنوع الجبنة اللي حطتها هي مثل الكريم جيز في علبة وذابت مع المكونات) أنا حطيت مازارولا وشوية بارمزان جيز +ملعقة صغيرة نعنع أخضر مفروم

بازيلاء

وممكن تضيفوا الخضار اللي تحبوها (جزر أو اي شي آخر)

معجون طماطم وبودرة الفلفل او

جبنة


الطريقة:


نقلي البصل حتى يبدأ بالذبلان ثم نضيف الفلفل ونقليه قليلا ثم الفطر ثم الذرة

ثم ملعقتين او ثلاث من معجون الطماطم وملعقتين من بودرة الفلفل وشوية ماء والملح وتصبح الخلطة جاهزة

بعد ذلك نتبلها مع المعكرونة المسلوقة سابقا ونضعهم في الصينية

ونضع على الوجه جبنة وندخلهم الفرن ونخرجهم عندما تذوب الجبنة

الطريقه :



في قدر نضع البصل الجزر مكعبات الثوم الدجاج و4 اكواب ماء ونضعهم فوق النار لمدة 20 دقيقة نصفي الكل من الماء .



نضع اللازانيا في الماء تتسلق مع شوي ملح ثم نصفيها


نمزج الجبنه والبقدونس وجوز الطيب واليبضة مع بعض.



نشوي الماشروم في شوي زيت .


في خلاط الخضار نطحن الدجاج واماشروم والخضار ونطحنهم .


ونضيف خليط الجبنه السابق

في مقلاة نمزج الزبدة والدقيق فوق النارنضيف البهار والملح نذيب الحليب في ثلثي كوب ماءنضيفه على خليط الزبدة ونضعه فوق النار مع التحريبك حتى يتشرب كل السائل نضيف الروب .


نمزج جيدا نيشلها من فوق النار نضيف الملح والبهار حسب الذوق .نسخن الفرننحتفظ بكوب من الصلصة .

ندهن قالب الفرن بطبقة من الصلصة .


نحشي الازانيا بجشوة الدجاج .

نمزج كوب الصلصة التي احتفضنا بها مع لب الافوكادو في الخلاط لما تستوي اللازانيا

نقدمها مع ملعقة صلصة الافوكادو الساخنة ونزينها بالفلفل الاحمر

بعد كذا نخلط في الخلاط طماط ومعجون طماط وفلفل بارد والحار يكون حسب الرغبه

ونضعه فوق البصل ونخلطه الى ان يتسبكنجيب دجاجه

ثم الذررة و نقلبها و تترك الى ان تذبل البندورةثم نضيف الصلصة

نضيف الماجي و الملح و الفلفل الاسود و الاوريجانو و طبعا ما بنتركها ابدا نستمر بالتحريك حتى ما تتكتل



نضيف الزبدة و نستمر بالتحريك الى ان يثخن قوام البشاميل هكذا

نقلب المكرونة مع البشاميل جيدا حتى يمتزجو و ممكن اضافة القليل من الجبنة معها
نحضر صينية الفرن ندهنا بقليل من الزبدة و نغطي قاع الصينية و الحواف بالبقسمات

نضيف طبقة من المكرونة ثم نفرد فوقها اللحمة ثم طبقة المكرونة
و نغطيها تماماثم باقي صلصة البشاميل هكذا

طريقة العمل :

قبل ما تطبخي المفروم اسلقي المكرونه تحطي في قدر مويه و اول ما تغلي المويه اضيفي لهاالمكرونه و خليها لى النار لمده ربع ساعه وبعدها صفي المكرونه في المصفايه و بعد ما تصفى من المويه رجعيها في القدر و حطيلها ملقعه سمن فارم عشان ما تلصق المكرونه مع بعض دحين دورالمفروم بعد ما تدوب المفرومه حطيها في الطاوه على النار اللين ما تندرالمويه حقتها وبعدهااضيفي الماجي

مقادير العجينة :
2 كوب ونص دقيق

نص كوب زيت

رشة ملح

ماء حسب العجن
مقادير الحشو :

1 ونص كوب لحم مفروم
1 بصلة كبيرة مفرومةربع كيلو مكرونة ( حلقات صغيرة أو كما نقول في ليبيا المكرونة الحراجيم )
3 بيضات
رشة ملح
بهارات حسب الرغبة ( زنجبيل ، حبهان ، .. )

رشة كسبر أو معدنوس ( بقدونس )

الطريقة :

1. نبدأ بتجهيز المفروم ، بغد غسله نجففه في النار ثم نضيفله البصل المفروم ونقلب مع إضافة القليل من الزيت لتحميره ثم نضيف البهارات ورشة الكسبر حتى يذبل البصل والكسبر ( وأنا عادة أحب تدخينه ).

2. نسلق المكرونة في ماء وملح ورشة بهارات ورشة زيت حتى لا تلتصق بعد نضجها ثم نصفيها من الماء جيداً.

3. نخلط العصاج ( خليط المفروم ) مع المكرونة المسلوقة .

4. نقوم بعجن العجينة ويلاحظ ألا تكون يابسة ثم نقسمها قسمين ، ونفرد القسم الأول ونضعه في طاجين مدهون بزيت ومرشوش بدقيق .

5. نخفق البيض ونأخذ ثلاثة أرباعه ونخلطه مع خليط المكرونة والمفروم ونترك الباقي لدهنه على الوجه ثم نوزع الخليط على جزء العجينة الأول .

6. نرش الجبنة المبشورة ونفرد القسم الثاني من العجينة ونلفه على " الضرابة " لكي نغطي به العجينة بسهولة .

7. ندهن الوجه بالبيض والجلجلان ( السمسم ) ثم ندخل الطاجين إلى الفرن حتى تنضج ، بعد خروجها من الفرن غطيها حتى لاتيبس خاصة ان العجينة بدون B.P او خميرة خبز .

طريقة التحضير:

ضعي معلقتين كبيرتين من الزيت علي النار (تسخن) , ضيفي اليها البصل حتي يصفر لونة ثم الثوم

المقادير :


_خضرة مشكلة جاهزة ..

_علبة و نص لازاينا ..

_نص كيلو لحم مفروم ..

_بهارات مشكلة ..

_ملح..

_علبتين صغار معجون طماطم ..

_بصلتين

الباشميل ..

عني انا ما التزم بالمقادير .. يعني على حسب الماي ..


بس مقاديري في الباشميل هي :


_كوب صغير طحين ..

_علبة قشطة ..

_3 ملاعق كبيرة حليب بودرة ..

_ ملعقة و نص كبيرة نشا ..

_علبة واحدة مرقة ماجي ..

احس انه هذي اللازانيا افضل الانواع .. لانها ما تلصق ببعضها ..

طريقة عمل صلصة اللحم المفروم..


_ نضع القليل من الزيت .. و نحمس البصل شوي .. و نضيف الخضرة المشكلة .. بعدها نضيف مرقة ماجي و نغطي الجدر حتى تتشرب الخضرة ريحة المرقة ..

_ نضيف اللحم المفروم و نقلبه قليلاً .. ثم نضيف البهارات و القليل من الملح دون ان نحرك ... و طبعا نغطي القدر حتى يتشرب اللحم رائحة البهارات .. ننتظر قليلاً .. ثم نخلط المقادير جميعها .. و من ثم نضيف علبتين معجون طماطم و نضيف ما يقارب كوب الماء .. ثم نرفعه من على النار بعد 10 دقائق ..

صلصة الباشميل ..



نخلط المقادير جميعها مع بعضها في القدر على نار هادئة مع الاستمرار في التقليب .. حتى تتكون عندنا خلطة غليظة القوام نوعاً ما ...
الطريقة ..

نملئ الماء في قدر كبير و ننتظر حتى يغلي .. و نضع فيه علبة و نصف من اللازانيا ..

ملاحظة : اللازانيا تحتاج الى وقت كافي حتى تنضج يعني يفضل انها تكون اول الاشياء طبخاً...

هذا شكله بعد وضعه في المشخلة ..

و نقوم بوضعها على اطراف المشخلة حتى نسهل على انفسنا العملية ..

بعد تجهيز الصينية المراد عمل اللازانيا فيها .. نضع القليل من الباشميل في قاع الصينية ..

ثم نصف شرائح اللازانيا فوقها .. و عند تغطية الصينية بأكملها نضع القليل من اللازانيا ايضا .. ثم نضع صلصة اللحم المفروم .. و بعدها نضع القليل من خلطة الباشميل ايضا .. ( وضع صلصلة الباشميل بين الطبقات يجعل اللازانيا لذيذة جداً .. لانه من دون وضع الصلصة بين الطبقات تظهر اللازانيا يابسة او ناشفة )



نسيت اصور من البداية .. لكن هذه الخطوات نفسها اللي في البداية .. لاننا راح نكررها مرتين ..

نكرر هالحركة مرتين فقط .. و اللي تبي تزيد كيفها ..

يعني في الطريقة عندنا 3 طبقات من شرايح اللازانيا .. و طبقتين من صلصة اللحم و الباشميل ..



في الطبقة الاخيرة .. نصف فقط شرايح اللازانيا و نختمها بوضع صلصة الباشميل في النهاية .

المهم .. ندخله الفرن حتى تحمر الطبقة الاخيرة من الباشميل ..

سلطة المعكرونة بالتونة

المقادير:


1 عبوه معكرونة ( بينا ) + 2/1 كوب من مايونيز + ملعقة شاي من مسحوق الزعتر المجفف + 2 عود من الكرفس المقطع مكعبات + علبه تونة كتلة + جـزر وطمـاطم مقطعه إلى مكعبات صغيرة + بازيليا مسلوقة.


الطريقة :


1. ضعي المعكرونة في ماء مغلي لمدة 11 دقيقة. صفيها من الماء واتركيها حتى تبرد
2. في إناء كبير افرغي محتويات علبه التونة بعد تصفيتها من الزيت و اهرسيها هرساً ناعماً و أضيفي البازيليا والجزر الطازج وقطع الطماطم والكرفس ومن ثم اخلطيها جيداً مع المايونيز حتى تتمازج.
3. ضعي المعكرونة في طبق تقديم السلطة واخلطيها مع المزيج حتى تتجانس. زينيها بقليل من الزعتر المجفف تقدم باردة مع شرائح من الليمون .
